Fantastic. Needs more sauce for later so make extra. I was weary of it being so full in glass dish and that it wouldn’t cook evenly (usually I make thinner in two dishes). I needed to cook an extra 15 minutes.
Was absolutely delicious. Like all your recipes.

I made this for my husband tonight. He requested meatloaf when I was putting together our shopping order. This was super easy and delicious. The mixture definitely seems wet when mixing, but it was perfectly moist, while retaining its shape, after cooking. I split the recipe in half since it’s just the two of us and it was the perfect amount. Thank you!

Hi Mandy! Yes, that will work fine. We used to use raw onion but I recently updated the recipe to now sauté the onions which caramelizes them a bit, and removes any unpleasant crunch and harshness.

Is that going to mess it up if the onions are in the meatloaf raw?

Hi, I’m so glad to hear you love the meatloaf recipe and the glaze! I love the idea of adding marinated onions.
