Hi Susan, I have never thought of adding zucchini, but one of my readers shared this: “I made this salad as a light lunch item and my wife loved it. I only had half a cucumber so I added half a zucchini to add a nice crunch factor. My knife skills aren’t great so it isn’t as nice looking as the pic but it tasted great.” I hope that helps.
